削り屑はハモンの廃棄部分ではありません。むしろその逆で、さまざまな部位から取れます。骨の近くや、スライス用のナイフでは届きにくい部分から、骨切りナイフでしか取り出せない、美味しいハモンの切れ端です。また、薄すぎてナイフに張り付いてしまったスライスから取れることもあります。風味豊かで、熟成がしっかり進んでいます。
5つ星ハモンは絶品で、その削り屑はサンドイッチやどんな料理に添えても素晴らしいものです。
The texture is spot on—these shavings melt on the tongue like the real jamón they come from, not dry scraps. I've been sprinkling them over scrambled eggs and even straight from the bag, and they're dangerously easy to finish.
These shavings are surprisingly meaty and rich, not the sad dry crumbs you usually get. They're perfect for scattering over eggs or a simple salad to add that proper jamón depth. I've already finished the bag and will be ordering another.
Opened the bag expecting sad crumbs and instead found thick, juicy pieces that taste just like a proper jamón ibérico. Used them to top some pan con tomate and they melted right on the bread, so much better than the dusty ends I've had from other packs.
