削ぎ切りは、ハモンの廃棄される残り物ではありません。むしろその逆で、さまざまな部位から取れます。骨の近くや、スライス用のナイフでは届きにくい部分で、骨切り用のナイフでしか取り出せない、美味しいハモンの切れ端です。また、薄すぎてスライス用ナイフに張り付いてしまったスライスから取れることもあります。風味豊かで、よく熟成されています。
These are proper little shavings, not sad crumbs—perfect for scattering over pasta or a simple tomato toast when you want that real jamón punch without carving a whole leg. The fat melts just enough to coat everything in flavor, and the 100g bag lasted me a good week of daily sprinkling.
The texture is spot on—fine enough to melt into scrambled eggs, but with enough chew that you know it's real jamón, not scraps. I tossed a handful into a warm potato dish and it elevated the whole meal instantly. Easily the best bag of virutas I've ordered so far.
These little shavings are perfect for topping pan con tomate, they melt on contact and really bring that deep, cured flavor. The bag is generous for the price, I'll be ordering more soon.
