Ham comes from the rear leg of the pig, which is larger and has more meat but also more fat from which ham is made. Due to the animal's own constitution and the fact that in ham the proportion of meat near the bone is lower than in the shoulder, the result is a product that cures more slowly, obtaining meat with softer flavor nuances than those of the shoulder.
When we talk about the Iberian breed, we refer to a product that can only be made in the Iberian Peninsula; the percentage refers to the purity of this breed, and if we add the qualifier "acorn-fed" we are already facing something unique, exquisite and exclusive. For a ham or shoulder to be considered acorn-fed, the animal in question must have spent its final fattening phase free-range in the Dehesas feeding on grasses, wild foods and, of course, acorns. This diet plus an artisanal curing process is what gives Iberian acorn-fed ham its special character in texture and flavor.
