Cut into the first slices last night and the 50% ibérico fat just melts on the tongue, exactly what I hoped for from a 7.5-8 kg piece. The little chorizo and salchichón that come in the box are a nice bonus for snacking while the jamón cures in the kitchen.

The chorizo and salchichón that come with it are a nice bonus, but the ham itself is the real showstopper—the fat just melts on the tongue and the 7.5kg weight means we'll be eating well for months. Sliced it thin for a party and it disappeared in twenty minutes.
