Viña Caeira 2022 is gemaakt met minimale interventie om de nobelheid van de kleine, compacte trossen van de Albariño-druif van Finca Pesqueiras te respecteren. De druiven worden met de hand geoogst in kratten van 12 kg, zoals vereist door de pergola-structuur van deze wijngaard. Langzame fermentaties bij lage temperaturen om de aromatische integriteit van de druif te behouden. Na de fermentatie volgt een rijping op de droesem gedurende ongeveer 4 maanden, waarbij de juiste balans tussen zuurgraad, frisheid en volume van de wijn wordt verkregen.

Wijn-spijscombinatie:

Subliem met Galicische kazen zoals die van Arzúa-Ulloa. Gegrilde sint-jakobsschelpen en mesheften of heerlijke mosselen uit de ría. Vissoorten zoals zeebrasem, tarbot en kabeljauw komen prachtig tot hun recht bij wijnen zoals Viña Caeira. Perfect bij Japanse gerechten zoals sushi en sashimi.
