The 4.5-5kg paleta has that deep, nutty bellota marbling you can see right through the thin slices, and the included chorizo and salchichón make it a proper spread for a weekend. Cured just right—melts on the tongue without being overly salty.

The chorizo and salchichón in the box are a nice bonus, but the paleta is the real star—the fat melts like butter and the meat is sweet, nutty, and perfectly cured. I’ve had cheaper ibéricos before, and this one is noticeably richer, worth every penny for a special occasion.
